Meat-free Chilli Con Carne with a touch of fall season


As many of you might have noticed, I'm trying my very best to change my diet to a more plant-based way of living. I slowly start to cut out meat and include more veggies. It is a lot of fun to experiment with the veggies and try to use different ingredients as substitute for meat.


Fall is as well the mushroom season in Norway, I grow up with hunting mushrooms every fall. In Oslo, or in the countryside with my family. 
The Norwegian woods are full of chanterelles right now. If you haven't tried it before, it is a good idea to fry some in a pan with some butter and salt, to see if you like it before adding it to your dish. 



For some reason, I have been craving chili con carne lately. Some hot, a bit spicy food is my favorite when it starts to get cooler out. Lighting up some candles on the table and a little glass of red wine is perfect for this season. 
This recipe was something I just made up while I was looking over what leftovers I had in the fridge and added one special, seasonal ingredient I will get back to later.


What you need for 4 people or 2 super hungry ones

1 package of meatish/ or tofu (400gr)
1/2 chili
3 cloves of garlic
1 large onion
olive oil
parmesan cheese
Kidney beans 
2 large carrots - can skip
2 cans of chopped tomatoes
pinch of salt
3 large tbs of honey or ketchup (for the sweetener)
2 handfuls of chanterelle  
(other kind of mushroom or skip mushrooms)
Nachos 
Sour cream 

What you do

Start with heating a pan, add some oil and the chopped onion, garlic and chili and the tofu or meatish. As everything gets golden, add the chanterelles and some salt. Then add the cans of tomatoes, the kidney beans, and the chopped carrots. I used a spirelli to get the carrots chopped in a spaghetti way. 
Cook it all together on low heat for 5-10 min. 



Serve the meat-free Chilli con Carne with heated nachos, sour cream, and parmesan cheese. I like to crisp the nachos over the plate, YUM!

Weekend summed up <3

I hope you all had a great weekend. I spent my weekend catching up with some friends and visited a cute old farm with my mom called Bogstad Gård. That's the beauty of Oslo, It is city life, but you are also close to both the sea and the countryside. On Bogstad gård they have cows, pigs, etc. So a lot of families visit this place over the weekend.



Today (Sunday) I had a small sale at home with some friends. I realized I have way too much stuff that I never get to use. I had a great time organizing my stuff and helping my friends with sizes. Vegan superfood brownie -4 ingredients only

Hey you all. 


I hope your September is going well so far. I have been stuck with visa papers and dialog with my lawyer the last week, and in between I'm cleaning up my closet because we are just moving. Whenever I have some time off, I go to the gym or out in the woods to get some fresh air. It is really lovely out now, and I'm especially excited about the mushroom season. Love picking mushrooms and cook dinner out of it. I will try to prepare a mushroom soup recipe for you this month, stay tuned!



Lately, I have been trying to challenge myself to eat more vegan, mainly because of the nature and everything going with the rainforest, but also because all science shows that eating more greens and less meat is better for our health. So far I haven't cut meat out complete, but I'm trying my best every day to find substantives for meat and dairy. Starting with cutting meat, and will try to follow with chicken. One step at the time. I honestly feel like its a lot easier to do this in the states, or actually anywhere else than Norway. Ever Sweden has better Vegan options in products than Norway. 



I have been craving chocolate and brownie lately, probably because it gets colder out and I feel like eating something cozy. I wanted to try to make a healthier brownie verson, more like an everyday dessert. I also tried to make it as easy and less complicated not with a bunch of ingredients. I did a few mistakes and tried a few times to add and take away some ingredients. This was the result I got most happy with. 


This dessert is perfect after a Sunday dinner, with some vanilla ice cream and berries, or just a piece after your workout with a cup of coffee. You can cut the left overs into pieces and refrigerate it, and serve next time you are having a guest over. 



What you need 


12 Dates 

1 Box of kidney beans 

1 Toppes tbs oil, I used cocosa (coconut oil)

3 Tbs cacao powder

Baking paper

Salt


What you do. 


Start with heating the oven to 175 degrees celcius. 

Remove the stones from all the dates and cut them into smaller pieces. 

Drain the Kidney beans and add everything to a blender or a food processor. 

At the end add 1 dl of water and a pinch of salt. 

Mix all together until the texture is smooth. 


Have the mixture over in prepared tin. I used a baking paper so I had less to clean up. 
Bake in the oven for 20 min, but this does always depend on your oven. A little trick to test if the brownie is done: Stick a toothpick or a knife in the center-right around the time your recipe says it should be done. If it comes out clean, it's done. If there are any traces of uncooked batter, let it continue baking for another few minutes and repeat the process until the toothpick comes out clean. 

The baking time also depends on how you prefer your brownie. I like mine super soft! 



Why this cake is good for you 


This cake is full of nutrition. Kidney beans are also a great source of several vitamins and minerals, they contain iron which is something a lot of us girls need to include more in our diet, because of the loss of blood during our period. Cacao is a great source of antioxidants- Antioxidants are thought to be effective in helping to prevent cancer. So yes for more chocolate in our diet, just remember to try finding the chocolates with less sugar, or try my homemade chocolate recipe. Dates do also contain a small amount of iron, they are high in fiber (which is good for our digestive system) and they have a natural sweetener witch makes them perfect for natural way of baking. Dates are also to be helpful for lowering inflammatory markers such as interleukin 6 (IL-6), in the brain.



Just remember not to tell your boyfriend or guests of the secret ingredient (beans), before they have tried the cake.. A lot of people get super skeptic when things are too healthy, haha. I kind of get it, but give it a try! At least this cake was accepted by my family and boyfriend. I hope you like it!

But what is happiness?

What is happiness? Isn't just ok enough?

The word ¨happiness¨ kinda annoys the shit out of me. In the US they even made a TV commercial for AT&T ending with ¨just ok, is not ok¨. 


Social media, television, and magazines are constantly telling us that our lives should contain nothing but constant happiness. Todays society shows no signs that it is ok to be just ok, and that it's also ok to have a bad day sometimes. Society today makes young people strive after happiness and the perfect life because that's what our brains constantly get fueled with. 



The other day I was talking to an old friend. She told me, ¨Eline, you know you are in some ways responsible for the pressure young people get exposed to today¨? That question bothered me. I have always taken for granted that everyone understands that what I put up and share on social media is a polished picture of my everyday life. My life is not perfect, not even close. I think the truth is that no-one has a perfect life, or a perfect family or a perfect relationship. Everyone fights their own battles in their own lives, most of us don't share them with the world. Most of us only share the sunny days, and it's easy to assume that everyone else's life is better than your own, just because of the pictures we see all over social media.



I think we've all been there, scrolling down our Instagram, thinking that our own life is shit, while it seems like everyone else is constantly happy. Including myself. This is also why I've been taking a break from Instagram, and it feels good to take a break once in a while. I think it's super important to remind ourselves that social media usually doesn't reflect reality - rather, it tends to show a super polished picture of people's lives. We need to stop comparing ourselves to others and stop judging people we don't know just trough their Instagram. We need to focus on ourselves and be happy with what we have right in front of us.



Society makes us feel like we need to look a certain way to be happy, or accepted. When we get there, we will be ¨happy¨. I think the truth is that no job, six-pack, or money will make you happier. Happiness starts with you, and you are responsible for your own happiness. As long as we do our best, that is good enough. I remember one model colleague I was working with told me this; ¨when I was on my skinniest and had a six-pack I was on my most miserable¨. Remember this next time you see a model and think that her life is so easy, and she is lucky to look that way. Looking skinny and ripped, doesn't always mean being healthy. And if skinny cause your health its defiantly not worth it. We all have different bodies. Healthy comes in all different shapes and sizes. Do not compare yourselves with anyone, only compare you with you. Being ok is more than good enough, and when happiness comes; embrace it! 


Finding your passion is happiness, drinking a cup of coffee with a good friend is happiness. At least for me, the genuine things and the genuine people in my life are what truly makes me happy. I have found my passion; nature. Nature is where I feel most alive, the most connected. Whenever I go through something difficult, nature is my medicine. 



I think happiness comes in small doses, and we can't expect life to only serve us happiness. That is not realistic. If we always strive after it, I don't think we will ever find it. Being happy in general is a good thing, but we need to accept that life is like a roller coaster. The sun doesn't always shine, it will rain and it will be stormy, but after rain comes to the sun again and that's kind of the beauty of life.

I hate goodbyes

The week is coming to an end. I hate saying goodbye to people I love. My boyfriend just left back to the states last week and I am staying in Norway for a little longer to take care of my new visa. Since we have been moving quite a lot lately, it feels like I have clothes laying around all over the place and I can't wait to get everything organized. 


I hate goodbyes, even when I know it's not gonna be for too long, it's always sad to say goodbye.

Today is the last day I see my brother too, he is studying in Milan. So I won't see him until Christmas. 


I decided to make some brownies for dessert for the last goodbye dinner, I experimented for a few days to get it right. I finally got a recipe I am happy with and excited to share with you. 

It contains no sugar, no milk products, and no wheat! As well as full of nutrition. Stay tuned, I will post in in a few days. 


Because of everything going on in the rain forest and with global warming I am trying to challenge myself to eat less meat, and include more veggies. Better for us, and better for the planet. I know its hard to cut the meat, especially if you don't know what else to add to your plate. I recommend following the @radicalbroccoli girls. They are super passionate about this and share a lot of easy tips about this theme. They inspire me a lot daily for more eco-friendly living, They also wrote a book that just got translated to English!

Super easy sides for the BBQ din-din


I wish the bbq season was all year around. Everyone gets together and bring all kind of different goodies to throw on the grill. It feels like almost everything tastes better grilled. I'm obsessed with Norwegian hot dogs, probably because they remind me of childhood and summer. I always try to add some healthy sides to my plate, creativity has no limits in the game of BBQing! Who doesn't love colorful, pretty plates? Here are some super easy sides that will impress your guests for the next get together. These sides work perfectly with any grilled from the grill.

Tomato Mozarella salad - with a summer touch

-This super easy salad only contains 4 ingredients only

1 pack with Strawberries - preferably Norwegian ones
2 packs of mini tomatoes
1 large mozarella cheese/ burrata cheese
1 handful of fresh balsamic vinegar
pinch of sea salt


Cut all the ingredients into smaller pieces and mix together. The cheese makes the salad kinda creamy, so you don’t need to add lots of extra oil. I prefer this salad with some sea salt and an aged balsamic vinegar.

Grilled filled peppers

4 large peppers
3 cloves of garlic
tomatoes
basil

Cut each pepper in two pieces, and remove the seeds from the inside

Chop the garlic pieces, some mini tomatoes, and some basil and add it to the peppers. I usually use aluminum foil to avoid making a mess with food getting stuck to the grill. In the end, add some olive oil and some sea salt. 

Leave on the grill until the peppers are golden and ready to dig in.

Exploring Lyngør Island

We have been exploring South Norway and Lyngør Island this weekend. Kinda sad that Norwegian summer is coming to an end already. We had a morning dip this morning and the ocean is already getting cooler.


Lyngør Island is one of my favorite islands. The island used to be a stop for the sailors, and the old sail maker house is now a restaurant. They are serving pizzas, and fresh Norwegian sea food! Really recommend to visit this place next summer. Its season based, so the restaurant is only open during the summer months.

I can't get enough of Norway this summer. It feels like I appreciate Norway another way after living in a noisy city like NYC, It is a huge difference. 
Some of my Norwegian friends living in NYC visiting Norway gets bored after a few days. They think it is too quiet and boring. I truly enjoy the quietness, waking up to the sound of the waves and not waking up by cars and ambulances feels relaxing. I really feel grateful for all my traveling, but there is no place like home.


My American friends say that I should be an ambassador for Norway, maybe cause I brag a bit too much about how amazing nature is here. Anyway, it seems like my bragging made many people I know curious, this summer a bunch of my friends from Florida visited Norway and went hiking in Lofoten! They had an amazing time. A few of them texted me after that they wanna move here!


Thats probably one of the good things about social media, people get to share amazing nature experiences there. Norway got so many hidden pearls and places people wouldn't know of without that one Instagram account they follow from Norway that makes them wanna go there and explore.


I hope you all have a good week. I am super excited to spend the weekend with my two girlfriends in Kragerø. I really don’t want this summer to end!

I love timeless pieces. When packing for summer I always bring simple denim pieces. It feels like denim goes with everything, especially for Norwegian summer where people dress more casual. It's easy to dress a denim dress up or down for whatever you feel like. I love this basic denim dress from Revolve. The dress is tight but super stretchy, so feels comfortable. For a more casual look, I wear it with an oversized vintage denim jacket.

Norwegian summer

Cabin Lyfe in South Norway

Most people would probably not believe me at first, but I love spending time alone, in nature, getting dirty and sweaty. Preferably not shower in a few days and just swim in the ocean. This makes me feel connected, alive and back to my roots. I appreciate home more then I have ever done before. Maybe gratitude comes with age, or just the fact that being able to miss things you might take for granted, make you more grateful in general. For me spending time in nature is the best way to connect and charge up my batteries.

I am feeling energized after spending some time in South Norway again.

Swim Week ended with a hospital visit

I'm usually never happy to leave Miami. But this time I’m excited to come back to Norway. I do feel like I am missing out on a lot of things by leaving Norway in July month. I do miss everyone back home now, so I’m super excited to go back. In my opinion, it is disgusting warm and humid in Florida now. I don’t understand people who plan their vacation here in July. If it wasn't for work I wound never decide to spend time here now. With that being said I had a great experience with Swim Week. And leaving filled with impressions and positive thoughts.



I got some bad luck with my health the last few days. Because of struggling with a virus for a while I have been drinking a ton of water during the intake of antibiotics because the doctor told me to drink a lot of fluids. I honestly never heard of water poisoning before. The whole experience was pretty scary and dramatic, even tho if it just seems a bit odd to get poisoned from water.



I felt like I was gonna blackout, my entire body was shaking and could bearly stand on my own feet when the ambulance picked me up. I was really scared, especially since I was all alone. When I got to the hospital I got good taken care of. They figured out that I had water intoxication. This occurs when the amount of salt and other electrolytes in your body become too diluted. Hyponatremia is a condition in which sodium (salt) levels become dangerously low. My electrolytes dropped too low too quickly. This can cause brain damage and in the worst case death.



Thank god I took action and asked for help. I honestly felt ashamed to reach out at first, but extremely glad I did. Remember, no one knows your body better then you do. When you feel something is not how it should be, never be ashamed to ask for help before its too late.



For anyone visiting the USA, my best advice to you; Always make sure you have your health insurance on track. If something happens to you during your stay, and you don’t have one you could end up spending your entire bank account on medicines and doctor visits. Unfortunately It is not the same kind of health care system as we have in Norway.



I'm feeling much better now and am excited to go back home. Hope you have a good start of your week.

Antibes -> Miami

After spending some spontaneous days in Antibes, I flew to Miami for some jobs I have here during Miami Swim week. I have been pretty excited for it, since its my first year experiencing Swim Week ever! I have always been avoiding going to Miami this time of year, because of the heat waves and also because its the best time of year to be in Norway and Europe.

I have to be honest and say Its not as glamorous as it looks on my insta story. Especially because I have been sick since I got here.
I forced myself to do a few of the castings, which I think made the sickness worse. With 500 girls sweating in the lines and hours of waiting, its been some pretty challenging days for everyone being a part of it. Anyway Im grateful to have the opportunity be here. Thankfully Im already pre booked for a few shows and Im really looking forward to do them!

Nothing can ever beat Norwegian summers when the weather is as good as it has been this weekend.
The days are long, and the nights are short. It's hard to go to sleep when it doesn't feel like night, especially when my head is still in NYC time zone.

I'm getting ready for Miami Swim week in less than a week. Kinda sad to leave so soon, but even more thankful for the time I get to spend home. I will probably spend most of August in Europe too and take some time off, which I'm super excited about!

Since Miami swim week is just around the corner, I'm trying to be as healthy as I can this week. (Will update more healthy recipes this summer)!
Which means no late-night snacking, chips or alcohol for me. Its my first time doing Swim week, so not sure what to expect.

I'm excited about a new experience and to see model colleagues from around the world. It will be a social week for sure!
